[Xingyaotang] A French pastry you will definitely master - Raspberry Soufflé
Overview
Soufflé is a famous French dessert born in the Middle Ages. Souffle in French means blowing. Its ingredients are fresh milk and egg whites, but they are baked in water until the egg whites swell. The taste is as light as a cloud, and there seems to be nothing in the mouth, but the mouth is full of frankincense. The baked soufflé must be tasted as soon as possible, otherwise it will collapse quickly. It's like a beautiful and ethereal dream, which will disappear in an instant if you don't pay attention.

Heat milk and orange peel in a pot

Mix sugar and potato starch, add egg yolks and beat until pale

Then pour in the heated milk (about half) and mix well

Pour the mixture back into the pot and cook over medium heat until it bubbles. Cook for another 1 to 2 minutes. After it thickens, weigh out 200g and pour it into a basin

After cooling, add orange wine

Start to beat the egg whites, add the sugar in the egg whites three times and beat until the egg whites are like a beak

Mix a portion of the weighed egg whites with the custard sauce, then pour the mixed batter back into the egg white bowl and mix evenly

Then put the batter in a piping bag, squeeze a layer (about 1/3) at the bottom of the container, and then add raspberries

Then fill the container with batter and smooth it out with a spatula

Adjust the temperature between 180-190 degrees and bake in the oven for 10 minutes before taking it out of the oven.
