Homemade tofu curd
Overview
I have always wanted to make tofu noodles but I was worried about not succeeding. When I bought lactones on Taobao, I saw some netizens saying they were successful and some saying they failed several times, so I never took action. I accidentally saw a post about making homemade tofu noodles, saying that as long as you remember three numbers, you will definitely succeed. These three numbers are: the dosage of dry soybeans, water, and lactone are 100g, 900g, and 3g respectively. After three times of practice, it was successfully done, but the amount of water used changed slightly. I used 900ml of water, which is slightly less than 900g of water. The lactone is exactly 3g per pack, which is very convenient to use.

Rinse 100g dry soybeans and soak them overnight

Add 900ml of water to the soaked soybeans and use a soymilk machine to make soybean juice

Cook the bean juice

Prepare a pack of lactone (one pack is exactly 3g) and dissolve it with warm water

Pour the bean juice into it, cover and simmer for about 15 minutes

After 15 minutes, the bean juice will turn into delicate and smooth tofu curd

Scoop out a few spoonfuls and put them into a bowl

Add coriander and dried shrimps

Pour in light soy sauce, sesame oil, vinegar, homemade chicken powder, and the delicious tofu is ready to eat
