Pineapple Fried Rice
Overview
Pineapple fried rice contains the sourness of pineapple and the sweetness of corn and dried raisins. The different textures can increase appetite, making it a relatively appetizing meal. Pick a ripe, bright-colored pineapple.

Wash well and cut in half. I am deliberately biased, you can install a little more, it depends on your personal preference. Then use a small spoon to scoop out the meat inside.

Cut the dug pineapple flesh into cubes and soak it in salt water for 20 to 30 minutes to remove the alkali in the pineapple itself.

Prepare corn kernels, dice carrots, green peppers, and beans, then boil them in hot water and set aside.

Soak the shrimps in warm water and set aside.

Prepare some dried raisins and minced green onions.

Fry the eggs and break them up. Set aside.

Put the watered corn kernels, carrot kernels, green pepper kernels, and green beans into the wok and stir-fry quickly for no more than 2 minutes. Then add the chopped eggs and raisins and stir-fry for no more than 1 minute. Add the cooked rice and stir-fry quickly. During this period, add some soy sauce and salt according to personal taste, and add minced green onions before serving.
