  1. Start by cooking enough noodles for one person.

  5. Cut lettuce, tofu, chopped green onion, and shredded ginger.

  6. Heat the oil in the wok, add the seafood and stir-fry over high heat until the surface of the seafood changes color.

  7. When the seafood changes color, add the tofu. At the same time, add seasonings, dark soy sauce, oyster sauce, shrimp paste, chopped green onion, and shredded ginger. Continue to stir-fry over high heat for about 45 seconds.

  8. Finally, add the cooled noodles and lettuce and stir-fry. Add black pepper and a small amount of chopped green onion before serving.
