Seafood Fried Noodles
Overview
I bought fresh lobster from the supermarket today, and used the tail meat and fresh shrimp to make this seafood fried noodles. Shrimp paste and oyster sauce are essential condiments to bring out the taste of seafood.

Start by cooking enough noodles for one person.

After the noodles are cooked, immediately blanch them in cold water.

Peel the shell and cut the lobster tail into pieces

Cut lettuce, tofu, chopped green onion, and shredded ginger.

Heat the oil in the wok, add the seafood and stir-fry over high heat until the surface of the seafood changes color.

When the seafood changes color, add the tofu. At the same time, add seasonings, dark soy sauce, oyster sauce, shrimp paste, chopped green onion, and shredded ginger. Continue to stir-fry over high heat for about 45 seconds.

Finally, add the cooled noodles and lettuce and stir-fry. Add black pepper and a small amount of chopped green onion before serving.
