Overview
The beef was bought from a Hui town. It is killed and sold now, which is a bit cruel. However, the meat is not watered, and it does not shrink much after being marinated. The meat is also chewy. It is almost August 15th. I bought some for my mother and kept a piece for myself. I can eat it with confidence.

Cut beef into large pieces.
