Cut the round eggplant into thin strips, sprinkle with salt and mix well.

Cut the large green pepper into strips about the same size as eggplant strips.

Cut the tomatoes into small pieces.

They are all cut and the eggplant is almost marinated. Maybe the time is short and the water is not squeezed out, but it is ok if it is a little wilted. Heat the oil in the frying pan, add the eggplant, and after a few minutes add the tomatoes and green peppers. Stir evenly and then add the soybean paste. Finally, sprinkle with minced garlic and remove from the pan.
