Cocoa Sponge Naked Cake
Overview
The first time I made a naked cake, I added cocoa powder to make it taste richer. The fruits are only strawberries and blueberries, which couldn’t be simpler. Although it is not perfect, it is my naked cake debut after all, and I feel beautiful!

Separating egg white and egg yolk

When the egg whites are beaten into rough foam, first add half of the fine sugar

Make obvious lines and when the egg white becomes fine, add the remaining fine sugar

Beat at medium speed until dry peaks form. Lift the whisk head and when the egg whites form a small right angle, pour in the egg yolks

Continue to beat at medium speed for one minute

Sift in the low-gluten flour three times, and mix thoroughly each time before adding the next flour. Be sure to mix lightly and quickly

Put milk, corn oil, and cocoa powder into a bowl and mix thoroughly

Use a rubber spatula to scoop some batter into the milk cocoa melt

Mix well

Pour the batter back into the large bowl and mix evenly

Grease the inner wall of the 6-inch removable bottom cake mold with butter in advance, sprinkle with a layer of dry flour, and set aside

Pour the cake batter into the mold and shake it gently a few times to release the big bubbles inside

Place in the middle rack of the preheated oven, 160 degrees, for about 35 minutes

After the baked cake comes out of the oven, gently shake the heat out of the cake, then place it upside down on a drying rack, let it cool completely and then remove it from the mold

Place the unmoulded cake on the table

Evenly divided into three layers

Wash the strawberries and drain the water

Wash the blueberries and drain the water

Take part of the strawberry, cut it in half, and use it in the sandwich

Put the whipped cream and caster sugar in a basin that has been refrigerated for more than 24 hours

Beat at medium speed until it becomes obvious texture and not easy to flow

Take an appropriate amount of butter paste and put it into a piping bag

First pipe a layer of cream on the outer ring of the first layer, then pipe some cream in the middle

Smooth it out with a spatula so that it is more even than spreading the butter directly

Arrange strawberry slices and blueberries as desired

Apply another layer of butter paste

Cover the second piece of cake, proceed in sequence, and then cover with the third piece

Pour on the custard, then place any fruit on top

Garnish with a few mint leaves to instantly add color
