Home-cooked fried squid with wild rice
Overview
When I was very young, I remember that my grandma loved to cook wild rice stir-fried squid for me and my cousins. She would eat a big bowl of rice every time, and she would eat all the rice mixed with soup. Later, I went to other places with my family. There was no seafood sold there. Occasionally, I ate what my mother cooked once or twice and it had the same taste, but I still thought it was my grandma who made it. Later, when I got married and started a family, I also fried it but it always tasted wrong. Maybe it was the taste of my grandma that I liked at that time!

Prepare the squid and wild rice.

Onion, ginger and garlic cloves

Squid cut flowers

Heat the pan with cold oil and stir-fry the squid until it starts to smoke

Add onion, ginger and garlic and stir-fry

Add oyster sauce, salt, soy sauce, brown sugar, and cooking wine to remove the fishy smell

Pour in the wild rice and stir-fry evenly. Add some water and simmer for a while. Drain the water and stir-fry over high heat

Turn off the heat, add chicken essence and chopped green onion and serve.
