Overview
Fried buns belong to the Henan cuisine, which originated in Kaifeng and has a history of more than 500 years. Nowadays, Baoze's fried buns are the most famous, crispy on the outside and tender on the inside.

Add the yeast powder boiled in warm water to the flour and knead it into a fluffy dough first. Add water while kneading it into a smooth dough. If you don’t like to eat whole grains, you can just use white flour.

For the meat slices (cut in the store), add 1 tablespoon of soy sauce, 1 gram of salt, a little pepper and chicken essence, mix well and set aside.

Wash the fennel cleanly and control the water.

Cut into pieces (it's still a bit long as shown in the picture, if it's well cut, you can cut it into finer pieces), mix with the meat slices, add 8 grams of salt, 10 grams of vegetable oil, a little chicken essence and sesame oil, and mix evenly.

Let the dough ferment until it doubles in size. Poke a hole and it will not shrink or collapse.

Shape into a uniform small dough, and press it into a dough that is thick in the middle and thin at the edges. What needs to be noted here is that the dough should not be pressed too thin, otherwise it will not rise well and it will be easily burnt to death.

Pinch in an appropriate amount of filling, and use your thumbs and index fingers to pinch the edges of the dough into pleats.

Large buns usually have about 18 pleats, and small buns can be pinched according to the habits of your hands.

Wrap the buns and put them directly into a griddle brushed with oil. Turn on medium heat and sear for a short while until the bottom is slightly brown.

Add half a bowl of boiling water, no more than one-third of the buns, then cover and turn to high heat, it will be almost done in about 10 minutes. Boil the water in the spatula. If there is a crackling sound inside, press the skin of the bun. If it springs back very well, it means it is cooked. If there is a pit when you press it, it means it is still cooked, and then continue to bake.
