Slice the pork tenderloin in the direction of the shredded meat, and then cut it into strips, about the same thickness as the belly of your little finger (it will be easier to cut after freezing and hardening)

Put it into a large bowl, add 1/2 teaspoon of salt and 2 teaspoons of cooking wine, mix well, and marinate for 15 minutes;

Add 5 tablespoons of dry starch to the marinated shredded pork;

Mix well until each piece of meat is coated with a layer of starch;

Heat the oil pan, add an appropriate amount of peanut oil, and heat it to 60-70% heat: try it with chopsticks, small bubbles will quickly appear around the chopsticks;
