Green onion stall with eggs
Overview
The general method of stir-frying chopped green onion and eggs is to stir the chopped green onions and egg liquid together and then fry them in a pan. My recipe for stir-frying eggs with chopped green onions is as follows: first stir-fry the chopped green onions to remove the fishy smell of the eggs, then stir-fry the chopped green onions, wait until the chopped green onions change color slightly, then pour in the egg liquid. After pouring the egg liquid into the pot, always use low heat. If necessary, lift the pot and remove it from the heat. The eggs stir-fried with chopped green onion in this way are golden in color, rich in green onion aroma, fresh and tender without any fishy smell.

Peel off the old leaves from the green onions and cut in the middle with a knife.

Chop green onions.

Chop the ginger into fine pieces.
