Wash and cut the mutton into cubes, peel and slice the ginger. Wash and cut radish and carrot into cubes. Wash the green onions and tie them

Pour water into the pot, add ginger slices, a handful of green onions, pour cooking wine and bring to a boil over high heat, add the mutton pieces. When the soup boils again, skim off the foam, take out the mutton pieces, run them under cold water and drain.

Take a small casserole, add the processed mutton pieces, green onions, pour in an appropriate amount of water and bring to a boil over high heat.

Add radish cubes and simmer over low heat until cooked.

Before serving, pick off the green onions and add appropriate amount of salt and pepper.
