Blanch the pork belly, cut into small pieces and set aside.

Heat oil in a cold pan, add rock sugar, and simmer over low heat until the rock sugar melts.

Pour in the meat, turn up the heat, stir-fry until browned, add cooking wine, onion, ginger, light soy sauce, dark soy sauce, and various spices.

Add enough water to cover the meat, bring to a boil over high heat, turn to low heat, and skim off any foam if there is any.

Soak the dried vegetables in warm water in advance, wash them, and add them when the soup has reduced by half. After about one to an hour and a half, add an appropriate amount of salt.

It is ready when the soup is almost reduced. If there is still a lot of juice after two hours, you can use high heat to reduce the juice.
