Overview

Braised pork is a famous traditional Chinese dish, which can be found in eight major cuisines. It tastes fat but not greasy, soft, glutinous and sweet. A bowl of rice is considered a good bowl if there is a fragrant piece of braised pork in it. Today I used a rice cooker to make a braised pork dish. The color is attractive and the taste is pure. It is worth recommending.

  1. Prepare ingredients: Main ingredients: 600 grams of pork belly (cut into small cubes); Ingredients: Green onion: 1 piece, ginger: 1 piece, star anise: 1 piece, bay leaves: 3 pieces, cinnamon bark: 1 piece, cumin: 1 small handful, pepper: 1 small handful, angelica: 2 pieces, galangal: 1 piece, pork belly: 1 (if you don’t have so many spices at home, you can reduce them to green onions, ginger, star anise, bay leaves, cinnamon, and peppercorns), cooking wine: 60ML, light soy sauce and dark soy sauce: a total of 80ML (the ratio of light soy sauce to dark soy sauce is 2:1), salt: 7 grams, rock sugar: 1 handful, and appropriate amount of water.

  2. After blanching the pork belly, remove it, wash it and drain it and set aside.

  3. Fried sugar color. Pour a little oil into the pot, add rock sugar to the cold oil, the rock sugar gradually melts, and the color changes from light to dark. Stop the fire when the small bubbles in the sugar color turn into large bubbles and the color turns brown-red. During this process, stir constantly with a shovel to avoid burning the pot.

  4. Pour the dried meat pieces into the pot and stir-fry evenly.

  5. Put green onions and ginger slices into the rice cooker pot as the bottom.

  8. Pour in cooking wine and soy sauce, and add water as appropriate depending on the liquid condition. The total amount of water should be almost equal to the meat, but not too much. Start the "cooking" function of the rice cooker and select "Fine Cooking" or "Fragrant Rice". You can choose the texture according to your rice cooker.

  9. After a process is completed, add salt and two small pieces of rock sugar, and turn the meat in the pot over to make it evenly colored. After stirring, start the "cooking" function again and select "Fine Cooking" and "Fragrant Rice". After the program is over, use chopsticks to pierce the meat. It is very easy to pierce and has a chewy texture. If you like the soft and glutinous texture, you can increase the time according to your preference.
