Honey Bitter Melon

Autumn is finally here. The clear blue sky makes our hearts clear when we look at it. The sky is high, the clouds are light and the breeze is rustling. Autumn always brings us endless joy. Autumn is dry, so it is healthy to eat bitter vegetables in autumn, such as bitter melon, bitter vegetables, lettuce, etc. There is a kind of sweetness called honey mixed with oil, and there is a kind of feeling called bitterness first and then sweetness. Mixing oil with honey is used to describe happiness reaching the extreme. It is generally used to describe the icing on the cake. Everyone knows the meaning of first bitter and then sweet, which means giving first and then reaping. My understanding is the mutual conversion of bitter and sweet, or it may be called the extreme of things. What I’m making today is honey-glazed bitter gourd. Because it contains honey and sesame oil, it also corresponds to the concept of mixing honey with oil to make it bitter first and then sweet.

Wash and remove the flesh from the bitter melon.

Cut the bitter melon into thin slices, sprinkle with a little salt and marinate for 5 minutes to control the moisture.

Take a clean small bowl and pour 10 grams of honey.

Add 1/2 tablespoon sesame oil and 1/3 tablespoon boiled water and stir evenly.
