Wash and blanch the pig tail, then put it in a wok and fry until it turns into a sugary color. Add an appropriate amount of star anise, Sichuan peppercorns, dried chili peppers, cooking wine, ginger, garlic, and a small amount of braised soy sauce and stir-fry evenly. Add a little water and stir-fry for a minute or two.

Pour the pig tails into the casserole and add an appropriate amount of water (just enough to cover the pig tails). Bring to a boil over high heat, then reduce to medium to low heat and simmer until a small amount of soup remains. Add appropriate amount of salt and stir-fry evenly.

Reduce the juice over high heat and serve on a plate.
