Wash the chicken and cut into small pieces.

Heat the pan with cold oil, add the chicken pieces and stir-fry.

Fry the oil from the chicken skin.

Add light soy sauce and cooking wine and stir-fry until fragrant.

Add water, ginger, dried chili peppers, star anise, peppercorns, and rock sugar and cook over low heat for about 30 minutes.

Wash and peel the chestnuts and set aside. I buy them directly and peel them.

Add the chestnuts and continue cooking for about 30 minutes, until the chestnuts are soft.
