Steps
-
Pour the cold water into the pot with chicken wing roots and tighten. At the same time boil a pot of water.
-
There is no water or oil in the pot, and the chicken wings are fried over low heat. (The order of steps 2-4 is because I was afraid of frying sugar and splattering oil, so I came up with this simple procedure)
-
When the chicken wings change color, add rock sugar.
-
Add light soy sauce to dark soy sauce at about 2:1.
-
Add onion, ginger and aniseed.
-
Add boiling water. The fire comes to a boil.
-
Simmer over low heat for 40 minutes. If you are in a hurry, it will be cooked in 20 minutes over high heat, but it will not taste good.
-
Collect the juice. Because there is no fried sugar color, it is important to collect the juice.
-
Plate it.
