Pineapple rice
Overview
The peak season of pineapples is here again, and the streets and alleys are filled with a strong sweet and sour aroma. Every time I see one, I can’t help but pick one, cut it home, soak it in salt and eat it. Recently I was thinking about eating something else, so I came up with this pineapple rice. The colors of the pineapple rice are well matched. Just looking at it makes people salivate, as if all the beautiful spring is put into a bowl. Spring is also the season when pineapples are in season, so eating some seasonal fruits and vegetables is of great benefit. The combination of pineapple meat and rice not only looks colorful, but also tastes fragrant, refreshing and delicious.

Blanch the green beans and corn kernels and remove them

Cut the whole pineapple into one third

Use a knife to make a circle around the outside of the pineapple and a cross on the inside

Use a spoon to scoop out the pineapple flesh and soak it in lightly salted water

Peel off the shells and devein the shrimp; cut the ham into small pieces

Pour oil into the pot, add corn kernels, green beans, ham sausage and shrimp and stir-fry

Pour in rice and stir-fry, add appropriate amount of salt and oyster sauce and continue to stir-fry

Finally add the pineapple and stir-fry briefly

Put the fried rice into the pineapple shell
