Wash the potatoes, peel them and cut into pieces.

Stir-fry the beef cubes in oil to remove the moisture, add star anise and saute and stir-fry until fragrant.

Add bean paste, ginger and garlic slices and stir-fry.

Fry until the beef becomes golden brown.

Add potatoes and water and bring to a boil over high heat, then simmer over low heat for 1 hour.

Add salt to taste and serve.

The potatoes are soft and glutinous, and the beef is delicious.
