Chives and egg rolls
Overview
If you don’t have time to make dumplings but want to eat dumplings, our family will make this delicious roll. The filling can be adjusted as desired, and adding vermicelli will make it more delicious. This is what my mother often made for me and my sisters and brothers when we were young. I also made it based on my mother’s recipe in my memory. It has my mother’s taste here.

Pick and wash the leeks, control the water and cut into sections;

Beat the eggs, add a little salt, and spread into egg skin;

Add a little oil to the pan and stir-fry the shrimp skin until fragrant;

Chop the egg skin into small pieces and mix with the leek segments and shrimp skin;

Add cooked vegetable oil, thirteen spices, and sesame oil and mix well (salt should be added before starting to wrap to prevent the leeks from becoming watery);

Stir the flour and water into a fluffy shape, let it rest for 15 minutes, roll it into thin slices, and cut it into rectangular pieces 15cm wide and 20cm long;

Take a short dough piece and evenly spread a layer of leek and egg filling;

Roll it up from one end;

Squeeze it slightly from both ends to the middle to form folds;

Do everything, put a cloth on the steamer, turn on the cold water, steam for 8-10 minutes, and steam for 2 minutes;
