Add brown sugar to warm water to dissolve, mix well, and let cool.

Pour the brown sugar water and eggs into the bread machine (reserve 20% of the brown sugar water. If the dough still cannot form a ball after mixing for 5 minutes, it means that the amount of water is insufficient. You can add 10% until the amount of water is enough. The amount of water must be added before adding butter).

Then pour in flour, pour salt in the upper right corner, make a hole in the middle of the flour, pour in yeast, and cover with flour.

Start the dough mixing program of the bread machine and mix the dough for 15 minutes. You can use chopsticks to stir the dough at the beginning, which can help the dough form a ball early.

Pause after kneading for 15 minutes and take out a small piece of dough to check. The dough has a certain gluten quality.

Long press the start button of the bread machine and select 1 standard mode, 750g, light color. I used Dongling DL-T02 this time. The whole process in standard mode is 2:58 minutes. Add the diced butter first, start the bread machine again, and let the bread machine continue kneading the dough for another 20 minutes.

At 2:38 minutes, the bread machine will make a beeping sound to remind you to put in the dried fruits, then put in the red dates prepared in advance, and let the bread machine knead the dough automatically for another 5 minutes, and the kneading program is completed (at this time, the bread machine displays the time as 2:33 minutes).

The bread machine works until the dough is kneaded and the dough is kneaded (40 minutes in total). The dough at this time is pliable and elastic, with a very smooth surface and no pits.

Stop the bread machine, apply a little oil on your hands, cut off a small piece of dough with a knife, and pull it gently (use a smooth surface when pulling the film). Check the dough condition: the film should be thin and tough and not easily broken. If the film is punctured, the edges of the holes will be smooth and round.

At this time, the bread machine enters the fermentation stage, the time is 52 minutes (1:41 minutes), and the machine is set to complete one fermentation. We can check the dough at 50 minutes. The dough has risen to 2-2.5 times in size. Dip your fingers in flour and poke a hole in the middle of the dough. If the dough does not shrink or collapse immediately, it is ready. (Some machines only ferment once, so just knead the dough and start shaping it).

There is a one-minute deflation time from 1:41 to 1:40. After deflation, take out the kneaded dough, flatten it with the palm of your hand to remove the air from the dough, divide it into four equal parts, roll it into a round shape, cover it with plastic wrap and let it rest for 5 minutes.

Use a rolling pin to roll the dough into an oval shape, and fold the dough in three parts, that is, fold it once up and down once.

Then rotate the folded dough 90 degrees and roll into long tongue shapes.

Entering the second fermentation at 1:40 minutes, the time is 57 minutes, and ends at 0:43 minutes. Ferment the dough for the second time until it doubles in size. Pay attention when fermenting for 40-45 minutes. If the dough has doubled in size and it is not yet time for the bread machine to bake, you can stop the bread machine and directly adjust to the baking program for baking; if the dough has not fermented enough after the second rise, then we pause the machine and use the residual temperature to ferment. (If the bread machine is seriously colored, you can wrap a layer of tin foil on the outside of the bread barrel. You can take it out 15 minutes or 20 minutes in advance depending on the coloring).

After the bread is baked, the bread machine will make a beep sound to remind you. At this time, carefully take out the bread bucket, pour the bread out and place it on the net. When it is lukewarm, put it into a plastic bag and tie it for storage. You can slice it when eating.
