Stir-fried carrots and peppers
Overview
This is a simple home-cooked dish. When cooking, the peppers are stir-fried until they are dehydrated, and then cooked with carrots. Stir-frying in this way gives the peppers a soft, glutinous, burnt flavor that goes well with both rice and wine. It's worth a try.

Cut carrots and peppers into strips.

Heat oil in a pan and add pepper strips. Stir-fry repeatedly over high heat until the peppers become wilted and dehydrated.

Dish it out and set aside.

Leave some oil in the pot, sauté the chopped green onion, and add the carrot sticks. Stir fry evenly. Cook in a little water to soften the carrot sticks.

Add the reserved pepper and stir-fry evenly.

Add salt and MSG to taste, stir-fry evenly, and turn off the heat

Remove from pan, plate, and serve.
