Overview

  1. Pour in the egg whites and beat until fish-eye foam forms. Add sugar in batches and beat until medium-dry peaks form. Sift in one-third of the powdery ingredients and use cutting techniques to blend the egg whites and powder

  2. Then sift in the remaining powdery ingredients and continue to cut and shape until it is completely incorporated. Repeat the pressing and shaping technique five times to make the batter appear in a ribbon shape. Squeeze out a 2-3cm shape on the baking sheet

  3. Lightly shake the baking pan to remove any air bubbles. Use a toothpick to pop the air bubbles and let the skin dry for about 45 minutes. The skin will not stick to your hands until it forms a small hard shell. Place it in the preheated oven and bake at 150 degrees for 16 minutes

  4. After the butter is softened, beat it with the light cream. Add the vanilla paste, sugar powder, and matcha powder and continue to beat. Beat until smooth and then match the macarons with the sauce
