Electric Pressure Cooker Braised Pork Trotters
Overview
I won’t give the dishes names either, because they are mainly braised in an electric pressure cooker, but they are braised in color, so I want to call them braised pork trotters and braised pork trotters. Alas, it’s difficult! I made a mistake and was afraid that people would criticize me, so I had no choice but to braise the pig's trotters! The method is based on my usual brine method. It is difficult to boil pork trotters. If they are not boiled, it will be too painful to stuff them in the teeth. Therefore, the electric pressure cooker is the best, most trouble-free and time-saving pot to make this dish. The pig trotters are very beautiful and delicious, and you no longer have to worry about stuffing them in the teeth.

First wash the pig's trotters with hot water, and use a knife to roughly break it into small pieces from the middle of the pig's feet along the joints. If it is difficult to untie, you can dismember it and cut it into two large pieces. It will be easier to dismember it after it is marinated

Boil water in a pot and blanch for two to three minutes

Then take it out, rinse it with cold water, and filter out the blood foam

Prepare gauze, wrap garlic, bay leaves, dried chilies, fennel, cinnamon, star anise, etc. to make a marinade bag

Spread the green onion and ginger slices flatly in the pot, and add the marinade packet

After spreading the spices, place the pig’s trotters in the pot and arrange them

Pour in enough cooking wine and some light soy sauce

Add the sugar color that has been boiled with rock sugar in advance (if you don’t know how to boil the sugar color, you can directly add rock sugar instead), dark soy sauce

Then add candied dates (candied fruits) and add 80% water to soak the pig’s feet

Put the electric pressure cooker into the electric pressure cooker and turn the red light to the tendon button to start the brine making process

After the marinade is done, remove the marinade packet and green onion leaves. Add appropriate amount of salt and chicken essence and cook for 2 minutes. Remove from the pot and sprinkle some chopped green onion
