Overview
A few pieces of ribs and a fresh bamboo shoot. Although the ingredients are simple, they stew over a slow fire to create a good pot of soup. Holding the bowl and drinking a spoonful of soup, Xian's eyebrows almost fell off.

Peel the spring bamboo shoots, take the tender stems and cut them into pieces; wash the ribs, drain them and set aside.

Blanch the bamboo shoots in a pot of boiling water for a while, then take them out.

Add enough water to the soup pot, add pork ribs, bamboo shoots, and ginger slices, and bring to a boil.

Skim off the foam, reduce to low heat and simmer for 1.5 hours.
