Pork kidneys with onions
Overview
Pork loin is the kidney of a pig, a type of internal organ. If it is not processed, it will have an unpleasant smell. Most people use it to stew soup, with angelica, astragalus, wolfberry, and a little lean meat. With the flavor-stealing angelica as an auxiliary ingredient, the smell cannot be tasted. This is my first time making stir-fry, and the finished product is very delicious. The main source of odor should be dealt with before cooking. Friends who like to eat kidney flowers, give it a try~

Main ingredients: kidneys, onions, garlic cloves, dried chilies.

Process the pork loin: Wash the pork loin and cut it in half. (As shown in the picture) (If you find it troublesome, you can ask the master to help clean the white meridians inside the pork loin when purchasing)

Use a knife to cut the white meridians inside the pork loin, and then use scissors to cut the small ones. Try to deal with it as cleanly as possible. The smell comes from these white things.

After cutting the white meridian, add 1 tablespoon of edible salt and rub it back and forth on the surface of the incision twice.

Rinse and drain. Put it into a bowl, pour 3 tablespoons of white wine or high-grade rice wine and marinate for a while.

Rinse the pork loin with clean water and slice into slices. Wash and cut the onions into cubes, peel and smash the garlic cloves, wash and cut the heads and tails of the dried peppers into dices.

Heat the pan, pour appropriate amount of oil, add minced garlic and sauté until fragrant.

Add chili and peppercorns.

Add onions and stir-fry for a while. (about 1 minute)

Push fried ingredients aside. (When there is a lot of food, scoop it up first. If there is a small amount, just push it to one side.)

Pour in the kidney flowers and stir-fry over high heat until white.

Add soy sauce and stir-fry evenly.

Add salt, chicken powder, and a little sugar.

Pick up the pan and stir-fry a few times, add coriander and mix well.
