Salmon with blueberry sauce
Overview
This blueberry sauce is very unique and I like it very much. Last time it was paired with roasted pork shoulder. This time I paired it with salmon. The result is unexpectedly delicious and it removes the fishy smell, which is very good!

Wash the salmon and add onions, ginger and garlic.

Add red wine, light soy sauce, chicken essence, black peppercorns, salt, sugar and olive oil and marinate for half an hour.

Preheat the oven to 190 degrees and bake in the oven for 40-50 minutes.

When finished, remove the bottom fish skin and set aside the green onions, ginger and garlic on the surface.

Saute onion, ginger and garlic, add blueberries and stir-fry, add water and simmer for 5 minutes.

Add red wine and add a piece of cold butter to melt before serving.
