  1. Prepare all ingredients

  2. Wash cucumbers and set aside

  3. Use a knife to remove the head and tail of the cucumber, then cut the cucumber into two along the middle

  4. Use the handle of a spoon to scrape out the cucumber seeds

  5. This is a shaved cucumber

  6. Rinse the shaved cucumbers with water

  7. Rinse and slice cucumbers for later use

  8. Pour the salt into the cucumbers, mix well with your hands, and let sit for 1 hour

  9. Squeeze out the water from the pickled cucumbers with your hands and set aside

  10. Wash and dice green onions and set aside

  11. Wash and dice ginger and set aside

  12. Pour corn oil into the pot and heat until 60% hot

  13. Add onion, ginger and pepper into the pot and stir-fry, turn off the heat

  14. Add cucumber, sugar, vegetable essence, sesame oil, stir evenly and it’s OK
