Potato stewed eggplant
Overview
Bought eggplant. For a while I didn’t know how to burn it. I used to steam eggplants a lot. Or fried eggplant. Or make fish-flavored eggplant. I want to change my taste today. Grab a few potatoes and start cooking. I didn't expect it to taste really good. Special meal.

Wash the eggplant. Wash and peel potatoes

All cut into hob pieces

I used two tablespoons of Haitian soybean paste. A little dried chili pepper. If you don’t like spicy food, you can leave it out, just use a little garlic

Then start preparing the seasoning. Pour 4 tablespoons of light soy sauce and one tablespoon of dark soy sauce into a bowl, then add one tablespoon of sugar and 2 tablespoons of cooking wine. A little bit of salt

Heat the oil pan.

Add eggplant and stir-fry.

Fry until half cooked and set aside

Then pour a little oil into the pot, add the potato cubes and stir-fry

Fry until the potato skin starts to get a little charred

Add eggplant and stir-fry

Then pour in two spoons of soybean paste

Stir well and then pour in the mixed sauce. Continue to stir-fry

Finally add a little water. Stew the potatoes and eggplant until tender. Garnish with some chopped green onion before serving.
