Wash the crayfish. (The crayfish is very dirty and has to be washed in several basins of water.)

Finely mince garlic.

Chop green onions.

Heat oil in a pan and saute minced garlic until fragrant.

Add crayfish and fry.

Add salt and light soy sauce and stir well, cover and cook until crayfish are cooked. (The shrimp shells are hard and thick, so the seasoning can be slightly salty to make it more delicious.).

Add green onions and stir-fry.
