Pluck rice (simple family recipe)
Overview
Rice pilaf is a common delicacy in Xinjiang with unique cooking methods and delicious taste. However, this kind of dish is not common in the eastern region. I have developed a simplified home recipe using a rice cooker for reference.

Prepare rice, mutton, carrots (because there is no yellow radish, use carrots instead) and purple onions.

Chop the carrots and onions and set aside. Cut the mutton into 0.5 cm or even smaller pieces. Be careful to remove the tendons that have a strong smell.

Add oil to the wok, when the oil is hot, add the diced mutton and stir-fry.

Add the diced carrots and onions and stir-fry until the carrots become soft.

Add about 100g of water and bring to a boil over low heat. If the mutton has a strong mutton smell, add an appropriate amount of cooking wine to remove the mutton. Add salt and MSG to make the taste slightly heavier than normal stir-fry dishes.

After washing the rice, spread it evenly on the bottom of the rice cooker.

Ladle the ingredients in the wok into the rice cooker and lay them flat on top of the rice. Be sure to scoop out the dry ingredients first, and finally pour the soup into the rice cooker until it is flush with the top surface of the ingredients.

Use a rice cooker to steam the rice until it's done cooking. Don't take out the inner pot yet, and use the keep-warm function to continue simmering it for 15 minutes to half an hour.

The most important step is to stir the rice with a wooden spoon or chopsticks after taking out the inner pot. At this time, the onions that were originally lumpy will gradually melt and disappear, and the rice will gradually become grainy and shiny.

Since Northeastern rice is more sticky and waxy than Xinjiang rice, the pilaf made has a higher viscosity, but it does not affect the overall flavor. When steaming, you can increase the amount of soup you pour to make the rice softer. If the soup is fried, put it in the rice cooker and soak it for a few hours to make the rice more flavorful.
