Lard
Overview
I have some pig fat left at home, but I have never had a chance to eat it. I was preparing to make mooncakes recently, so I made them into lard.

You should use lard to cook lard. I had too much pig fat left at home, so I made the fat into oil. The method is the same.
-
Cut the fat into small cubes so that the oil will come out faster.
-
Put the fat cut into small cubes into the pot, add 100 grams of water, and bring to a boil over medium-low heat.
-
After about three to five minutes, the water will be exhausted, the pork fat will gradually become transparent, and the oil will begin to seep out.
-
Keep the fire low throughout the process. After the oil is leached, control it in time to prevent the color from turning yellow due to high temperature for a long time.
-
Take an empty basin and place a colander on it to drain out the grease and separate out the oil residue.
-
Pour the oil residue from the colander into the pot and continue heating. After two or three times of oil control, the pork fat cubes gradually become smaller and the color turns golden. At this time, there is no more oil precipitating. Turn off the heat.

From 440 grams of fat, a total of 320 grams of lard is produced. Can be sealed in a bottle and stored in the refrigerator.
