Boiled Amaranth
Overview
I ate boiled amaranth in a restaurant here a few years ago. I thought it was a very novel way to cook it. At home, we usually just stir-fry it with garlic cloves. In fact, this method of boiling it is also very simple. You can give it a try!

Pick the old rhizomes of amaranth

Wash the amaranth, drain the water and set aside. Cut the preserved eggs into small pieces
