Pork ribs and roasted yam
Overview
There are very few yam in my hometown. When my father comes to my house, the most common things I make for him are yam soup with pork ribs and roasted yam with pork ribs. Dad likes to eat it, and he always buys some after returning to his hometown. The old couple will often cook it and eat it. My mother smiled and said: I learned how to maintain health during my trip to my daughter. It’s true. The most common things my father adds to his rice cereal for breakfast are yam, sweet potato, and pumpkin, which are not only nutritious but also easy to absorb.

Thaw the ribs, soak in water to remove blood, wash and take them out

Pour the cold water into the pot for the ribs, bring to a boil over high heat, skim off the foam, remove and set aside

Heat oil in a pan. When the oil is hot, add onion, ginger and star anise and stir-fry over low heat until fragrant

Slightly yellow onion and add tomato sauce

Pour in the pork ribs, stir-fry until the color changes, add cooking wine and soy sauce and stir-fry until the color becomes darker and the water vapor is reduced

Pour in hot water that covers the ingredients and bring to a boil

Pour into the pressure cooker, set the ribs setting, and press for 30 minutes. (For ribs that are not organic, the pressing time should be shortened appropriately)

Peel and cut the yam into pieces, and quickly soak in water to prevent it from turning black. (My speed is just too slow and it turns a little black)

After the ribs are pressed, return the soup to the wok, add yam and thirteen incense, and bring to a boil over high heat

Add salt and reduce the juice over high heat

When the soup is halfway through, add rock sugar

Turn off the heat when half of the remaining ribs are received.
