Brine shrimp
Overview
For fresh shrimps, just use the simplest method and just boil them. In the past, shrimps were boiled plain, with at least a little green onion and ginger. Today I specially added salt when cooking. The seasoning is always interesting. Adding a spoonful of salt made the shrimps fresher and sweeter. For fresh shrimps, I usually wash them with a little salt water.

Prepare onions and ginger, part of the ginger here will be used to make dipping sauce.

Cut green onions into large sections and slice ginger. Add water to a small pot, add onions and ginger and cook.

Use a toothpick to remove the sand lines.

After the water boils, add salt and mix well.

Put the shrimp into the pot

Cook thoroughly. The time required will vary depending on the pot and stove.

Peel and grind the ginger into puree, add light soy sauce, sesame oil and vinegar to make juice. Take out the cooked shrimps, dip them in the sauce and enjoy.
