Blanch the enoki mushrooms in hot water, heat the oil, add the enoki mushrooms and stir-fry

Add yellow chili sauce. If you think the yellow chili sauce is spicy, add less and add water

Pour in the broth, boil the enoki mushrooms and cook

Add beef slices and cooking wine

Cover the pot and simmer over low to low heat until it boils. Add white vinegar, a little salt (yellow peppers are inherently salty, so salt should be added as appropriate. If the saltiness is a concern, there is no need to add salt), a little chicken essence, and white sugar

Take out the fat beef, enoki mushrooms and soup, leave a little remaining soup, add green onions and simmer for a while

Add the chili pepper and simmer for a while (like me, if you only like mild spicy food, you can cook it like this. If you like it very spicy, you can add the chili pepper when you stew the beef before, and finally add the green onions and take it out)
