Ershu Soy Milk

Ershu Soy Milk

Overview

Sweet potatoes and purple potatoes are both praised as healthy foods. Sweet potatoes are said to prevent cancer and are known as longevity fruits. The deep purple color of purple sweet potatoes means that they are rich in anthocyanins, antioxidant substances known to everyone on earth. I usually steam them and never mix them in the same vat of soy milk. It’s really curious to think about what colors they will produce when they collide. The result is always unexpected, a purple-red color, although it is a bit gray, it is still easy to see the red component. Interesting, right?
