[Kneading dough] 250 grams of snowflake powder, 30 grams of cocoa powder (also called chocolate powder), add 3 grams of yeast powder, and mix with an appropriate amount of water to form a dough of moderate softness and hardness. After fermentation to double the size, knead it into a smooth dough (there is heating in winter, so mix the dough the night before and it will ferment overnight).

[Walnut filling] Peel 10 walnuts, peel out the walnut kernels, 3 tablespoons of black sesame seeds, put them into the pot, turn on medium-low heat and prepare to dry.

Crush the prepared walnut kernels (or use a grinder to grind the walnuts into medium-sized walnuts), add 2 spoons of wheat germ powder and 2 spoons of homemade osmanthus honey (the honey used here is thick and not very sweet, adjust the sweetness according to your own taste).

Stir thoroughly to form a walnut filling (with a light osmanthus fragrance).

[Walnut Bun] Divide the dough into equal portions, roll it into a bun wrapper, add appropriate amount of walnut filling, wrap it up and roll it into a round ball.

Use a tool to shape the rounded buns into the shape of walnuts (the pattern is more natural😄~), put it in a steamer and let it rise for 5-10 minutes (the specific time depends on the room temperature).

After the water boils, steam for 15 minutes and simmer for another 5 minutes before serving (a total of 13 walnut buns are wrapped in flour and walnut filling here).
