Cut the ribs into small pieces and blanch them in cold water in a pot. When the foam starts to float, remove the ribs and rinse them with hot water to clean off the foam on the surface

Add boiling water to cover the ribs, bring to a boil over high heat, then simmer over low heat for 1 hour

When the soup is almost reduced, add salt and lemon juice

Add a little soy sauce. The soy sauce I used is lighter in color because the ribs are already well colored. I just want to add a little flavor, so I don’t need dark soy sauce. If you don’t have this kind of soy sauce, you can use light soy sauce instead
