Wash the fresh oyster mushrooms and soak them in light salt water for ten minutes.

Cut the carrots into diamond-shaped slices, blanch them in boiling water for one minute, take them out, cool them and set aside. Slice the cucumbers.

Pour cooking oil into the pot. When the oil is 40% hot, add chopped green onion and lean pork shreds and stir-fry for a while. Add carrot slices, oyster mushrooms and cucumber slices. Pour in oil, salt and chicken essence and stir-fry for a few more times. Remove from the pot and serve on a plate.

After serving, add a few drops of sesame oil.
