Cheese Buttercream Cup Cake

As an event guest this time, I participated in the mobile game Smash Cookies White Valentine's Day themed event. The organizer asked me to teach the guests how to make cup cakes on the spot. Of course, the cakes made in the event were definitely simpler than this. The guests with zero knowledge did not need to beat egg whites at all. To be precise, they made muffins. In order to decorate the scene, I made a few at home on the morning of the event. The muffins I made that day puffed up very beautifully. Unfortunately, I was pressed for time (I was late) and I didn't have time to take a photo of them... Sigh. The cream frosting on the cake I made today is different from that on the day of the event. This cake has a very thick taste and a rough texture. The reason is that the method is very simple, and it will increase your confidence for beginners.

Put the egg yolk and protein into oil-free and water-free containers respectively;

Add 10g of fine sugar to the egg yolks and beat evenly with a manual egg beater;

Sift in low-gluten flour and red yeast rice powder, mix well and set aside;

Use an electric egg beater to beat the egg whites until they become foamy, then add the remaining one-third of the fine sugar;

Continue to beat until the egg whites are very fine, then add one-third of the fine sugar. When the traces of the egg whites do not disappear, add the last fine sugar;

After the egg head is lifted out, the egg whites will bend and have small corners, so you need to continue beating;

Finally, the egg whites should be in the shape of sharp peaks;

Take some of the egg whites and mix them into the batter;

Then pour all the batter into the egg whites and mix well;

Pour the batter into the paper cup 7-8 minutes full;

Preheat the oven to 150 degrees, put the baking sheet in and bake for about 30 minutes;

After the butter has softened naturally, add powdered sugar and beat with an electric mixer until it swells, turns light in color and appears feathery;

Add the softened cheese and mix again;

Pour the buttercream into a piping bag and spread it on the cake.
