The sweet and sour pickled pepper lotus root slices are crispy, tender and appetizing. One of my favorite ways to eat them.

Prepare the ingredients

Peel the lotus root and cut into thin slices, soak in light salt water for a few minutes to prevent discoloration

Put water in the pot. When the water boils, add the soaked lotus root and blanch it. When the water boils, take it out

Blanched lotus roots are placed in cold water and cooled to keep the lotus root slices crisp
-
Drain the cooled lotus root slices and put them into a container. Add dried chili peppers, sugar, pickled peppers and half a bowl of pickled pepper water

Add fruit vinegar

Mix well, cover with a sealing lid and refrigerate for 2 hours before eating.
