Curry Pork Floss
Overview
I was speechless when I saw the meat floss my friend bought online. The price was really cheap. But if I think about the price of meat and the amount of meat floss that can be made from one pound of meat, I would not dare to eat the meat floss. I made some myself, firstly for my son to eat, and secondly for my friends to try. The meat floss made by yourself will fill your mouth with the taste of meat. The seasonings will not mask the flavor of the meat.

Cut the lean pork into large pieces and blanch it in cold water to remove the blood foam,
-
Prepare the ingredients for cooking the meat: star anise, Sichuan peppercorns, cinnamon, bay leaves, cloves, fennel, pepper, ginger and fragrant sand
-
Put the blanched meat into boiling water and add the cooking ingredients
-
Bring to a boil over high heat, then turn to low heat and simmer for 40 minutes, take out and let cool.
-
Tear the cooked meat into thin shreds with your hands. This is a delicate job. Less than 2 pounds of meat, it took nearly 2 hours to tear by hand!
-
Then put it into a plastic bag and roll it repeatedly with a rolling pin, and then tear it apart. This way the shreds of meat will be looser.
-
Put a little oil in the pot, add the shredded pork and stir-fry
-
Add a small amount of light soy sauce, sugar and salt, and continue to stir-fry
-
Let the shredded pork slowly dry out, then add curry powder and continue to stir-fry
-
As long as the shredded pork is basically dry.
