How to make lotus leaf clip
Overview
The lotus leaf clip is shaped like a lotus leaf, unique in style, white in color, soft and delicious. If eaten with fatty dishes, the richness will be even better. In fact, lotus leaf sandwich is very similar to Roujiamo, but it tastes softer than Roujiamo and has a more tender texture. Because it looks like a lotus leaf, it was named lotus leaf clip.

Steps
-
Mix the yeast and milk evenly, pour in the flour, knead evenly into a smooth dough, then put it in the bread machine to ferment for more than an hour. If you don’t have a bread machine, put the dough into a bowl, cover with plastic wrap and ferment for an hour.
-
Take out the dough, spread it with thin flour, knead the dough repeatedly to remove air bubbles, and finally divide it into 7 equal parts. Then take a small dough, first make it round, then make it long, and roll it into an oval.
-
Apply oil on the dough to prevent sticking. Fold the oval dough in half and use a clean comb to press out the texture. You can press harder. If you press lightly, you may not be able to get the texture after steaming. Then use your thumb and index finger to pinch the shape of the bottom of the leaf.
-
Place it on the steamer and steam over high heat for 10 minutes.
-
While steaming the lotus leaves, you can make the fillings. This time I used pickles and minced meat. I washed the pickles I made at home and soaked them in water to let the pickles grow in size. Then I chopped the pickles finely and set them aside.
-
Heat the oil pan, add Sichuan peppercorns, and stir-fry the minced meat together. After the meat is cooked, add pickles and stir-fry together, and add some watercress as appropriate.
-
After frying, take it out of the pan and put it on the plate.
