Mini version of oyster omelette
Overview
Oyster omelette, also known as oyster omelette, is a well-known snack in southern Fujian. It is a dish made by combining oysters with sweet potato powder, eggs, garlic leaves or leeks. Sea oysters are also called oysters. "Compendium of Materia Medica" states that eating more of them can refine and cleanse the skin, nourish the kidneys and strengthen yang, cure deficiency, and relieve erysipelas. Su Dongpo mentioned it together with the bear's paw in the north. Modern nutrition science has also confirmed that oysters are rich in nutrients and contain a variety of nutrients such as vitamins, taurine, glycogen and other minerals. Their iodine content is 200 times higher than that of milk and egg yolks. Their high zinc content is the highest among other foods, and they are known as the milk of the sea. In fact, on our northern coast, this traditional method is called oyster cake. The method is very similar, except that the sweet potato powder is replaced with flour. It is the most common home-cooked dish on the tables of seaside people. It is not difficult to make oyster pan-fried. Add sweet potato powder (or flour) to water and stir into a slurry. Cut the chives into small pieces and pour it in. In order to make the color of the finished product look good to the senses, I innovatively added a small amount of diced carrots, then added an appropriate amount of salt and pepper, and mixed well. Mix the washed fresh oyster meat into it, pour the mixed ingredients into the oil pan, and fry on both sides until the oysters are cooked. 500g oysters

200g sweet potato powder, 4 eggs

Rinse the oysters with water and set aside;
