  1. Cut 100g of cowpea into two finger lengths.

  2. Blanch in boiling water until raw and remove.

  3. Heat an appropriate amount of oil in a pot, stir-fry ginger, garlic, Sichuan peppercorns, and millet pepper until fragrant.

  4. Pour in the blanched cowpeas and stir-fry a few times.

  5. Appropriate amount of salt and light soy sauce to taste.
