Hokkaido Toast
Overview
This is an oil-free bread. Because of the addition of light cream, it is very soft and chewy. Whether you eat it hot or cold, it tastes very good and makes you want to eat it again. If you don’t believe me, try it...

Steps
-
Prepare the ingredients: 100 grams of milk, 80 grams of light cream, 5 grams of salt, 35 grams of whole egg liquid, 40 grams of fine sugar, 15 grams of milk powder, 30 grams of low-gluten flour, 270 grams of high-gluten flour, 5 grams of dry yeast
-
Put the liquid and salt on the bottom layer of the bread bucket, with the flour in the middle and yeast on the top. Turn on the kneading mode for 25 minutes and then knead again for 25 minutes, for a total of 50 minutes to the fully expanded stage
-
Roll the kneaded dough into a round shape on the chopping board
-
Place into a clean, water-free container and cover with plastic wrap
-
Put it in the oven to turn on the fermentation function, put a plate of hot water on the bottom layer, and ferment until it is 2.5 times in size
-
Use chopsticks to poke a hole in the middle of the fermented dough. If it does not shrink back, it means it has fermented
-
Take out the dough and deflate it slightly
-
Divide into three equal portions, roll into balls, cover with plastic wrap and let rest for 20 minutes
-
Take out a noodle and roll it into a long strip
-
Roll up from top to bottom
-
Once everything is done, cover it with plastic wrap and let it sit for 10 minutes
-
Take out the dough, lay it upright and roll it out again
-
Roll from top to bottom
-
The rolls should be the same size, do not roll too thickly, about 2 and a half turns
-
Prepare everything and put it into the toast mold
-
Put it in the oven and start the fermentation function
-
When fermentation is about 90% full, cover it with a lid
-
Put it into the preheated oven, turn the heat up and down, and set the middle layer to 180 degrees for about 40 minutes
