Choose fresh red peppers based on your personal preference for spiciness. Some people like it to be extra spicy, so they can choose thin and small chili peppers; some people like it to be spicy in general, so they can choose slender string peppers. Because children have sensitive taste buds, we choose slightly spicy red peppers, as shown in the picture. In order to keep the hot sauce from burning, it is necessary to choose fresh chili peppers instead of dried chili peppers.

Use a food processor to mince the peppers (you can also chop them by hand).

Peel and chop the garlic.

The Haitian soybean paste I used can eliminate the steps of chicken essence and white sugar, because the soybean paste is already very fresh and slightly sweet.

Heat oil in a pan

Stir-fry the pepper until medium cooked, add soybean paste. Spread the soybean paste evenly over the peppers, do not stir-fry, and be careful not to overheat to avoid burning the pan. Note, be very careful not to put the garlic in and stir-fry at this time. The garlic should be fried thoroughly before adding it! Only say important things once. Sauté until the peppers are cooked through. Finally add some sugar (depending on your preference for sweetness). Because the soybean paste I bought is slightly sweet, the final product is also good without adding sugar. Add (or not) salt according to personal preference. Finally add chicken essence. (Use good quality soybean paste, which tastes delicious. You don’t need to add chicken essence, but I didn’t). Turn off the heat.

After cooling, add minced garlic, stir evenly, and bottle. Considering the storage time, it is best to dry and sterile the bottle (scald it with boiling water and then dry it), and put it in the refrigerator after filling. Because it does not contain preservatives, it should be stored in the refrigerator. When eating, use a clean spoon to put the hot sauce into a small butterfly and eat it on the same day.
