Coconut bread (bread machine version)
Overview
The bread made by hand shaping is beautiful, and the coconut-flavored bread is my favorite, so today I decided to challenge the slightly difficult shaping bread, and in the end it was a gorgeous success. Thank you so much for the bread machine. I feel that the bread machine is very practical and saves money, effort and time.

Bread ingredients: high-gluten flour 375g fine sugar 45g 1 egg (about 50g) salt 3g yeast 5g milk powder 12g milk 210g butter 45g

Coconut filling: 35g butter, 38g caster sugar, 38g whole eggs, 38g milk, 35g shredded coconut, 75g

Make the dough first, add the dough ingredients except butter into the bread bucket in the order of liquid first and then solid (milk-eggs-sugar, salt-high-gluten flour-milk powder-yeast), and finally dig a small hole in the flour and add the yeast

Start the bread machine's custom dough mixing program, select 20 minutes, and start kneading (after mixing for a while, you can add water or flour as an adjustment according to the softness and hardness of the dough)

After 20 minutes, the first dough mixing process ends. The dough has been kneaded until smooth. At this time, you can add butter and start the second dough mixing process, which is also 20 minutes

After both dough mixing programs are completed, select the yogurt function (i.e. fermentation function), cover the bread machine cover and ferment. It will be ready when it reaches 2-2.5 times the original volume

At this point, you can make the coconut filling: after the butter has softened until it can be poked with your fingers, add fine sugar and beat with a whisk

Add the egg liquid in 2 batches, stirring each time before adding the next one

Add the milk one at a time and stir evenly with a spatula

Add grated coconut and mix well

In this way, the coconut filling is ready

Take the risen dough out of the bread machine, place it on a silicone plate to deflate, and roll it into a large rectangle. Evenly spread the prepared coconut filling

Roll it up, pinch the edge tightly, and cut it from the middle with a knife (leave the top bit uncut)

Twist it into a figure 8 shape, pinch both ends tightly, put it into the bread machine, select the yogurt function (i.e. fermentation function), cover the bread machine lid for the final fermentation, and it will be ready when it has risen to 2-2.5 times the original volume

Select the baking function, set the time to 40 minutes, and select the burnt color

After baking for 25 minutes, brush the remaining egg wash on the surface of the bread and continue baking
